These thermostats have the contacts close on temperature rise and are rated at 10a 120vac or 5a 240 vac. By removing the two screws, aluminum cap comes off of top exposing a smaller screw that locks setting and larger one sets temperature actuation point. Loosen the small screw and adjust large one until desired temperature is achieved, then tighten.

For sale is a never used - Fenwal thermoswitch thermostat catalog, sealed in the original packaging. Each unit is sealed in a foil-lined cloth bag with of desiccant and humidity indicator. For your application, the on-off setting can be changed by cutting wire on seal and removing it from two screws. Each has a terminal block for easy wire connections see photos.
